Happy Birthday Olivia!

It’s about 25 hours and 1 year ago since I got to hold you in my arms for the first time. I’m sitting here contemplating the day you were born. I am overwhelmed by God’s grace. You have been such a blessing to me Olivia. You were entrusted to us at a time when I needed you most. You have been such a source of hope and healing for me. Everyday I miss your sibling -a brother or sister that we never got to meet. BUT, you are here with us, and I would not ever trade anything to have it any other way. God healed my broken heart, but blessing me with you – so much joy. Every smile, every hug, and every kiss you give me. I hope you will know how much much I love and adore you. Everyday you humble. Every time I look at you I want to be a better mother. My prayer for you – my sweet Olivia – is that you know Jesus, and know how much He loves you. I pray that you will have a faith in Jesus that’s alive and real!

Welcome 2012

Another year, another fresh start.  I’m excited to see what this year has in store for us.  Last year was draining – emotionally and mentally from work.  However, it was a growing year for me spiritually as well.  Here’s a recap…

January – Tim turns the BIG 3-0!  I’m am very plagued with morning sickness (at this point, about 10 weeks along).

February – Still plagued with morning sickness, managing through work though, celebrated my 28th birthday.

March – Spring Break – WOO HOO!  Also feeling somewhat “better.”

April – Got some yard work done!  Threw a surprise birthday party (sweet 16) for my sister-in-law, Mollie.  Also made some Death by Chocolate cupcakes, YUM!

May – DONE with the 2010-2011 school year.  It was kind of a sad year, and not so much sad that I wouldn’t see these students anymore, but it was just a very discouraging year.  I am so thankful for my women’s group this year.  I was so encouraged and strengthened so many times, when I felt like work just really had me down.

June – Bring on summer break!  Getting stuff done/ready for Baby Olivia to arrive.  Tim returned to Office Max to pick up some extra hours.

July – Threw a Spiderman bash for our little man early in case Olivia decided to come early.  Well, she came early, not that THAT early, but she came FAST!  First contraction around 8ish, and I was holding her by 9:30.  I almost delivered in the elevator!  The week I returned home, Tim ended up on a gnarly trial for 3 weeks!!!!

August – Mixed feelings.  August marked 1-year I had miscarried.  However, it’s hard to process because if I hadn’t miscarried, I would not have had sweet Olivia, and I would not give her up for anything.  On maternity leave.

September – Celebrated our 5th anniversary.  Got a really pretty bracelet from Tim (search for Trollbeads).  I returned to work the Monday after our anniversary.  Leadership training.  Also started women’s Bible study – I get to participate as an assistant leader this year.

October – Made Natty’s Rapunzel costume this year, came out good for my first attempt at sewing a dress.  Also started practice for Natty’s Christmas program – her first time in it this year!

November – Celebrated Natty’s 4th birthday, Tangled-style.  Tim’s dad came over during Thanksgiving break to enclose one of our rooms into Tim’s office.

December – Attended Natty’s Christmas program, SUPER cute!  CHRISTMAS!!!  We went to Orange County, Santa Ana, back home, and to Corona.  Sounds like A LOT of driving.  I am just thankful most of our families live within driving distances.  We also started tackling some housing projects.  By “we” I actually mean Tim. 🙂  He had to do the brunt of the work.  We now have a freshly painted living room (took off the tacty, ugly wood paneling around our patio door).

As you can see, we pretty much keep busy with church, the kids, and our little house.  A big deal for me this year has been learning contentment.  Especially with this day and age, things are just plain rough!  The economy just doesn’t seem to be getting better.  We get so discouraged sometimes waiting to see when Tim will get the full-time professorship.  It’s hard waiting.  It’s also hard to not get bitter.  But again, and again, the Lord provides – in the weirdest of ways sometimes – but in just the most perfect ways.

I’m not really into resolutions, but below are things I’d like to accomplish for 2012.

1.  Pay off our little Saturn, so we can start shopping for a larger vehicle.  Got our eyes on the Acadia.

2.  Build up our savings.

3.  Take an actual “VACATION” with the kids.  We have never gone anywhere, as in overnight trips, with the kids.  Our last “vacation” would have been our honeymoon cruise to Ensenada.

4.  Paint the kids  rooms (Natty & Olivia’s will be an Olivia the Pig theme; Nathan’s will be Spiderman).

5.  Stay in God’s word DAILY – outside of Bible study.

Six Years Ago…

Six years ago, the love of my life asked me to spend the rest of my life with him.  I am so glad I said YES!!!  It is really funny how the Lord works things out sometimes.  His will has been, by far, greater and better than anything I could have wanted or thought was best for me.  That year we moved to the United States, I was very depressed and lonely.  I was attending university with the sole purpose of finishing quickly and moving “home” – Thailand.  The Lord says that He knows the plans He has for us, to give us a future and hope…”  Boy!  I’m so glad I didn’t get my way.  That first year at CBU, I met my best friend!  After a year-long friendship, we started dating.  Fast forward to the end of 2005, we enjoyed a fabulous Japanese cuisine, a carriage ride, and a marriage proposal.  Fast forward to 2011, we are blessed beyond our wildest dreams with the BEST 3 children EVER!  Of course, I am a little biased, but hey, THEY ARE!!!  🙂 

 

We originally tried to take the kids back to the Mission Inn (where Tim proposed) to look at the Christmas lights and walk around the old city streets.  There was absolutely NO parking and it was crazy-crowded.  So Tim was going to spoil me and let run into Starbucks for a treat.  The line had like 10+ people in it.  With 3 kiddos in the car with Tim, I took pity.  So we headed to Vons to pick up a last few items for tomorrow, and I was going to get treat at the in-store Starbucks.  Tim went to Ralphs instead, by accident.  It was a funny night, but we finally made it to Vons, I got my latte, and we cheered the kids up by letting them open gifts from my matron of honor, AND best buddy, Nicole!  The kids were really bummed we couldn’t find a parking space.  The gifts sure cheered them up though, so THANK YOU Ariyavatkuls!

Natty Writes Her Name from Memory

Ok!  Last post of the night!  For Natty’s birthday this year, I had her sign her thank you cards.  So far, she can write her nickname, Natty, from memory.  I’m so proud of her!

 

Natty Christmas Program

I seem to be on a roll tonight!  Enjoy some pictures from Natty’s Christmas program.  The 3 year old group (Natty’s 4, but with a late birthday, we went with the 3’s) did a rendition of The Good Ship Lollipop.  It was SO cute!  Enjoy!

It’s Almost Christmas

I have been a really terrible blogger this year!  We have been busy to say the least.  However, I thought I’d share little decorations with you since it’s almost Christmas.  We didn’t really do much because we are in the middle of a house project.  Enjoy!

You can see the wall behind our Christmas Tree that Tim’s father put in for us over Thanksgiving Break.  Our next project is to PAINT!  Inside Tim’s office (other side of wall), we’ll be taking down some track lighting (that same w/ house) and putting in a ceiling fan of some sort possibly.

What’s an Asian mantel without an orchid right??? Anyhow, our nicer nativity sets, and if you look at both ends are Natty’s pictures from our church’s Christmas program.

If you have little kids, you also can’t be without the Veggietales nativity scene.  I love that the kids can manipulate and play with it.  We can talk about the characters and their importance, and I don’t have to worry about anything breaking.

Last picture is our display of cards.  I’ve really got to come up with a better way to display them next year.

The Birthday Girl

I can’t believe our baby is 4!!!  Natty wanted a Rapunzel party this year.  The girls (and Nathan) played “Pin Eugene on the Head” with a frying pan.  So cute, and everyone had a blast, especially the birthday girl.  Natty picked out cheddar brats for food, and we had mini-quiches and mini-fruit tarts.  LOTS of food and LOTS of fun!

Wow! It’s been a long time since I’ve blogged. What can I say? Life happens, and it’s certainly been keeping me busy! SInce I’ve last posted, we’ve celebrated our 5th anniversary, I’ve returned to work, we’re halfway through our Women’s Study, celebrated my sister’s birthday, took the kids to a pumpkin patch, carve pumpkins, celebrated Hallelujah Night at church, and celebrated Natty’s birthday! WOW!

I promise to post some updated pictures of the kids in a couple days. We have Natty’s 4th birthday party on Saturday, so there’ll be plenty of pictures in my next post.

For now, here’s the run down:

Olivia – She’s a few days shy of 4 months old now. She is our sunshine. This girl wakes up HAPPPY! I could not have asked for a better baby. She is the most content little girl. She just melts my heart. She loves sucking on her hands. Not quite sure if we have a thumb sucker yet, she’s found it a couple of times. Can’t decide what color her eyes are yet. Somedays they look really dark blue, others they look brown. She is just gorgeous!

Nathan – Our bright and energetic 2 year old. Nathan always holds a very special place in my heart. He is my cuddle bug and lovey boy. He certainly keeps us on our toes, but I love every minute of it. His speech has really been growning the past month or so. He speaks almost always in clear and correct sentences now. He loves all things CARS, Spiderman, Dinosaur Train, and tormenting his older sister. 🙂

Natty – Our beautiful 4 year old is just growing way too fast! She’s still in gymnastics and doing great. She loves tumbling and swinging on the bars. She’s also very excited to be starting school this upcoming fall. I can’t believe I’ll have a kindergartener soon! She’s also in the Christmas program this year at our church and has been having a blast learning her routine.

New Orleans Style Bell-Peppers

Make this in my crockpot last night. It was VERY yummy!

 

RECIPE:

 

Ingredients…

  • 8 oz ground chicken breast (I used turkey)
  • 1/2 c. sliced celery
  • 1 tsp olive oil
  • 1 can diced tomatoes, undrained
  • 1 1/3 c. cooked brown rice
  • 1 medium jalapeno, seeded and finely chopped
  • 1/2 tsp. cajun seasoning
  • 1/8 tsp salt
  • 4 large sweet peppers

Directions…

  1. In large skillet cook meat w/ celery in hot oil over medium until browned.  Drain tomatoes, reserving liquid.  Add 1/2 tomatoes, cooked brown rice, jalapeno, cajun season, and salt to meat.  Remove tops, membranes, and seeds from peppers.  Spoon meat mixture into peppers.  Pour reserved tomato liquid and remaining tomatoes into bottom of 5- to 6-qt. slow cooker.  Place peppers in cooker.
  2. Cover and cook on low for 6-7 hrs or on high for 3 – 3 1/2 hrs.  (I cooked mine on low for 5 hrs, and that was PLENTY, depending on how you like your peppers.)
  3. Transfer peppers to serving plate, and serve w/ tomatoes from slow cooker.
