New Orleans Style Bell-Peppers

Make this in my crockpot last night. It was VERY yummy!

 

RECIPE:

 

Ingredients…

  • 8 oz ground chicken breast (I used turkey)
  • 1/2 c. sliced celery
  • 1 tsp olive oil
  • 1 can diced tomatoes, undrained
  • 1 1/3 c. cooked brown rice
  • 1 medium jalapeno, seeded and finely chopped
  • 1/2 tsp. cajun seasoning
  • 1/8 tsp salt
  • 4 large sweet peppers

Directions…

  1. In large skillet cook meat w/ celery in hot oil over medium until browned.  Drain tomatoes, reserving liquid.  Add 1/2 tomatoes, cooked brown rice, jalapeno, cajun season, and salt to meat.  Remove tops, membranes, and seeds from peppers.  Spoon meat mixture into peppers.  Pour reserved tomato liquid and remaining tomatoes into bottom of 5- to 6-qt. slow cooker.  Place peppers in cooker.
  2. Cover and cook on low for 6-7 hrs or on high for 3 – 3 1/2 hrs.  (I cooked mine on low for 5 hrs, and that was PLENTY, depending on how you like your peppers.)
  3. Transfer peppers to serving plate, and serve w/ tomatoes from slow cooker.
